Ciliegiolo is a red grape native to northern Italy that is seldom seen these days, and Lugano vinifies it to show its light and fruity character. The wine is ripe with intense fruit flavors of cherries and forest berries and a touch of tartness, complemented by an enduring, minerally finish.
Enoteca Bisson was born in 1978 when Pierluigi Lugano fell in love with the wines of the Ligurian coastline. He began as a trader in small lots of bulk wine, later became a wine merchant and finally a grower in his own right. He now splits his time between his busy wine shop in Chiavari, the wine cellar and his vineyards.

GA CLAMS
SAPELO ISLAND CLAMS
We use clams (a mollusk)from Sapelo island,Ga whenever available. Country ham is braised with aromatics. Sweat garlic and shallot then add the clams and steam with reserved braising liquid and then we add the andouille sausage corn heavy cream and mount with butter and herbs. Served with grilled sourdough.
